I’m popping on here quickly to share the recipe for a Gluten Free Banana Loaf that I whipped up this afternoon. A few people had asked me to share it after mentioning it on my stories on instagram. I just came in from planting sweet peas well into the dark. Ahhh summer.
Don’t mind my cell phone shot… but it really is tasty so that’s all that matters!
I am a total eye baller when it comes to baking, so some of my measurements are approximate. Like the honey and coconut sugar. So, you may want to play around with that! haha

Gluten Free Banana Loaf
This simple banana load recipe is great as is, or as a muffin mix.
Ingredients
- 1/2 cup oil I used grapeseed
- 1/3 cup honey
- 3 ripe, mashed bananas
- 2 eggs
Dry Ingredients
- 3 tbsp coconut sugar
- 1 cup oat flour
- 1 cup up Bob’s Red Mill 1 for 1 gluten free baking flour (with the blue label)
- 1/2 tbsp baking powder
- salt to taste
- 1/2 cup chocolate chips
Instructions
- Mash bananas and mix oil, honey, and whipped eggs.
- Mix dry ingredients.
- Combine wet and dry ingredients. Pour into greased loaf pan. (I just use a little coconut oil)
- Bake for about 1 hr in 350 F oven, or until tooth pick comes out clean.
- Let stand in tin about 10 mins, then turn out on wire rack to cool.
