Gluten Free Banana Loaf
This simple banana load recipe is great as is, or as a muffin mix.

- 1/2 cup oil I used grapeseed
- 1/3 cup honey
- 3 ripe, mashed bananas
- 2 eggs
Dry Ingredients
- 3 tbsp coconut sugar
- 1 cup oat flour
- 1 cup up Bob’s Red Mill 1 for 1 gluten free baking flour (with the blue label)
- 1/2 tbsp baking powder
- salt to taste
- 1/2 cup chocolate chips
Mash bananas and mix oil, honey, and whipped eggs.
Mix dry ingredients.
Combine wet and dry ingredients. Pour into greased loaf pan. (I just use a little coconut oil)
Bake for about 1 hr in 350 F oven, or until tooth pick comes out clean.
Let stand in tin about 10 mins, then turn out on wire rack to cool.
