This oat cake has become a breakfast staple in our house! I recently shared that I’ve been trying to really stick to a meal plan- and one of the ways I do this is by prepping some breakfast and snack foods on Mondays. Things like this oat cake, or apple sauce muffins are really simple and have similar ingredients.
It’s naturally gluten free which is perfect for us- and everyone loves it. You can add simple mix ins- but our favorites so far have been pumpkin and apple cinnamon.
If you’d like to enjoy it hot- you can mix everything up the night before, stick it in the fridge then bake it in the morning. In our house I generally mix it up and bake it on Monday afternoon, to eat the next day, or I’ll double the recipe to keep us stocked for the week.

Apple Cinnamon Breakfast Oat Cake Recipe
Ingredients
- 2 cups rolled oats
- 1 cup milk
- 1/2 cup apple sauce
- 2 tbsp melted coconut oil
- 2 eggs
- 1 apple chopped into chunks
- 1 tsp vanilla
dry ingredients
- 1/3 cup brown sugar
- 1 1/2 tsp baking powder
- salt to taste
- 1 tsp cinnamon
Instructions
- Combine Oats and Milk.
- Add in apple sauce, lightly beaten eggs, coconut oil, apple chunks and vanilla. Stir until mixed.
- In a separate bowl toss together dry ingredients.
- Add wet mixture in to dry mix and stir until combined. Pour into an 8×8 baking dish.
- Bake at 350F for approximately 30 minutes, or until toothpick inserted in centre comes out clean.
