Buffalo Chicken Calzone

A few weeks ago a girlfriend of mine sent over a piece of her pizza roll…. and although she wasn’t happy with her dough, I thought it was delish! So, one night I tried to duplicate the flavor- and made what I am calling “Buffalo Chicken Calzones.” I made these for Matt and my Bro-in-law- and my sister said she wanted the recipe- so here it is!

I used a simple pizza dough recipe that doesn’t require much prep time, but if you have a favorite dough recipe you could use that as well! I prepped the dough while my chicken was cooking. I am the type of person who cooks and bakes to taste/appearance… So, if it looks like it needs more or less sauce, just go for it. I just shook hot sauce and bbq sauce until it looked good, and tasted the same… but I’ve tried to estimate amounts for your convenience! Because I guess thats the point of having a recipe…

This is pretty easy and would feed a family of 4  with a salad along side it. I allowed my calzone to rise after I folded it, because I was making 2… and I definitely noticed the size difference. So if you have the time to let it rise for a bit after you fold it, I recommend it! Happy cooking!

Easy Pizza Dough

  • 1 tbsp Yeast
  • 1 cup of Warm Water
  • 1 tsp Salt
  • 1 tsp sugar
  • 2 tbsp oil
  • 2 1/2 cups Flour
  1. Dissolve yeast and sugar in warm water. Let stand 10 minutes. (it should bubble and foam)
  2. Mix dry ingredients in a separate bowl. 
  3. Add oil and yeast mixture to dry ingredients. Knead dough thoroughly.  Stretch out into a large circle on a pizza stone. Let rise for 5-10 mins. 

Buffalo Chicken Filling (preheat oven to 450F)

  •  2 Chicken breasts, chopped
  • 1/4+ cup Franks Red Hot Original Cayenne Sauce
  • 3 tbsp CattleBoyz Big Rock Original Barbecue Sauce
  • Chicken Spice
  • 3 Cheese Ranch
  • 1 cup Mozzarella cheese (save a handful for the top)
  • 1 cup Cheddar Cheese
  1. Thoroughly cook chicken. Add spice.
  2. Add BBQ sauce and Franks Hot Sauce to chicken. Simmer for 5 minutes.
  3. Remove from heat and add another sprinkle of hot sauce to sauce it up!
  4. Drizzle Ranch over 1/2 pizza dough. Spread chicken mixture on same half.
  5. Top with chesses and fold dough over. Press edges shut.
  6. Bake for 13-18 minutes at 450 F. (I have a finnicky oven- so keep an eye on it! baking times may vary)

  1. my recipe uses blue cheese dressing with hot sauce and yeast that works!! but your mix on things the kids would be able to eat it too!!
